Do not attempt to insert the tubing into the stiffener while the stiffener is inside the fitting because the stiffener will not properly seat into the PEX. Remove the stiffener (using the disconnect clip and needle-nose pliers), and insert it into the PEX and then insert the PEX into the fitting. (Most people get a water tight seal without the stiffener so they elect not to use it.)
